  • 2 mediumbananas(peeled and thinly sliced)
  • 0.5 cupextra virgin olive oil
  • 1 cupgranulated sugar
  • 2eggs
  • 1 tspvanilla extract
  • 0.5 cupsour cream(regular or light)
  • 1.5 cupsall purpose flour
  • 1 tspbaking soda
  • 0.25 tspsalt
  • 0.5 cupsemi sweet chocolate chips or nuts(optional)

Instructions

  1. 1Preheat oven to 350°F. Slice two medium bananas thinly.
  2. 2In a large bowl add oil, sugar, eggs and mix well.
  3. 3Add vanilla and mix. Then add sour cream and mix until combined.
  4. 4Add sliced bananas, flour, baking soda, salt and chocolate chips. Mix just until flour is incorporated.
  5. 5Pour into a 9"x5" loaf pan. Bake for approximately 45-55 minutes, just until tester comes out clean. Enjoy!
