Cheese Mixture

  • 4eggs(separated)
  • 0.75 cupsugar
  • 16 ozmascarpone cheese

Assembly

  • 0.5 cupcoffee(1/2 cup water with 1 tsp instant coffee)
  • 0.25 cupKahlua or rum
  • 1 pkglady finger cookies
  • 2 ozsemi-sweet chocolate(finely grated)

Instructions

Cheese Mixture

  1. 1Beat yolks in medium size bowl, adding sugar gradually until well mixed (no gritty feeling is left).
  2. 2Add mascarpone and mix well.
  3. 3Beat egg whites in deep bowl until soft peaks form.
  4. 4Fold into cheese mixture.

Assembly

  1. 1Spread 1/4 of cheese mixture into 12 cup large bowl.
  2. 2Dip lady fingers in mixture of Kahlua & coffee and cover cheese layer.
  3. 3Repeat 3 times using chocolate on each and ending with cheese and chocolate.
  4. 4Refrigerate 6 hours or overnight.
  5. 5Serve chilled to 8 to 10 uplifted guests.
