- 1 cuprolled oats
- 2 largeeggs
- 1ripe banana
- 1 tablespoonchia seeds
- 1 teaspoonbaking powder
- 1 teaspoonvanilla extract
- 1 tablespooncoconut oil(more for cooking)
- 0.25 cupmilk(almond, soy, or dairy)
- 0.5 teaspoonsalt

- honey or maple syrup(to serve)
Instructions
- 1Heat a large cast-iron skillet or large, non-stick frying pan over medium-low heat.
- 2Into the work bowl of your food processor place the oats and grind them into a fine flour.
- 3Add the eggs, banana, chia, baking powder, vanilla, coconut oil, milk, and salt and blend until smooth.
- 4The mixture should be thick but pourable like a traditional pancake batter. Add more milk if needed.
- 5Place about 1 teaspoon of coconut oil on the griddle and brush to coat.
- 6Place 1/8 cup of batter on the griddle. It should fall into a 2-inch circle. Repeat.
- 7Allow pancakes to cook for 4 minutes or until bubbles start to form on the surface and the underside is golden.
- 8Carefully flip the pancakes and cook for another 3 minutes or until pancake is golden and set all the way through.
- 9Repeat until all batter is used.
- 10Serve warm with a drizzle of honey, maple syrup, bananas, and berries.
