- 4chicken thighs
- 0.5white onion(diced)
- 1shallot(diced)
- 1 clovegarlic(minced)
- 2 Tbsptarragon(chopped)
- 1 Tbspfresh thyme leaves
- 1 Tbsptomato paste
- 200 mlred wine vinegar
- 400 mlwhite burgundy wine
- 400 mlchicken stock
- 400 mlheavy cream
- salt(to taste)
- pepper(to taste)
- neutral oil
Instructions
- 1Begin by prepping the vegetables
- 2In a heavy bottom pan sear the chicken on both sides in neutral oil until nicely browned, remove from the pan
- 3Add onion, shallot, garlic to the pan and cook over medium heat until sweat down and lightly browned all over
- 4Add tomato paste and continue to cook for 2 minutes incorporating completely
- 5Turn heat to high and add vinegar. Cook until boiling and reduce to almost syrupy consistency
- 6Add wine and boil for 2 minutes. Add stock and herb and bring to a boil
- 7Once boiling reduce to simmer, add chicken pieces and cover. Cook 15-20 minutes
- 8Remove lid and remove chicken pieces
- 9Add cream and bring to the boil. Cook until reduced by 50%
- 10Add chicken back to the pot and cover for 1 minute to reheat chicken
- 11Serve with plenty of sauce and more chopped tarragon
