- 4Yukon gold potatoes(cut in half)
- salt(to taste)
- 1fresh parsley(minced)
- 1lemon(juiced)
- 1garlic(minced)
- olive oil(to taste)
- black pepper(to taste)
- 2 tspgranulated garlic
- dried oregano(to taste)
- 4chicken thighs
- 4chicken drumsticks
- 1lemon(halved for roasting)
- arugula(for serving)
Instructions
- 1Cut Yukon gold potatoes in half and boil in salted water for 7-8 minutes until tender but still slightly firm in center, then drain.
- 2Mince fresh parsley and add to bowl with lemon juice, minced garlic, olive oil, salt, and pepper. Reserve half of this mixture.
- 3To the remaining half, add granulated garlic, dried oregano, more salt, and olive oil to make marinade.
- 4Toss chicken pieces and parboiled potatoes with the marinade until well coated.
- 5Arrange chicken and potatoes on parchment-lined sheet tray with chicken skin side up. Nestle lemon halves around the pan.
- 6Roast at 475°F convection (or 500°F regular) for about 1 hour, turning pan once halfway through for even browning.
- 7When done, squeeze the roasted lemon halves over everything and toss with reserved fresh herb mixture.
- 8Serve over arugula with a drizzle of olive oil.
