- 3 lbground beef(80/20)
- oil
- 1yellow onion(diced)
- Jalapeño
- 6 clovesgarlic(minced)
- 3 Tbspchili powder
- 1 Tbspcumin seed - mortar and pestle(or sub for ground)
- oregano
- 2 tspgarlic powder
- salt(to taste)
- black pepper(to taste)
- 2 cansdiced tomatoes with green chilies(10 oz cans, Rotel brand)
- Tbsptomato paste
- 3 cupschicken stock
- Kidney beans(canned)
- 2bay leaves
Instructions
- 1Heat oil in a pot over high heat
- 2Add ground beef and let brown without moving it initially to get good browning on one side
- 3Dice onion and mince garlic
- 4Add onions and garlic to the browned beef and cook briefly until onions soften
- 5Season with salt and black pepper
- 6Add tomato paste and spice blend (chili powder, cumin, oregano, garlic powder)
- 7Toast the spices in the beef fat to bloom the flavors
- 8Add diced tomatoes with green chilies and chicken stock
- 9Rinse tomato cans with stock to get remaining bits
- 10Add beans and bay leaves
- 11Simmer for about 30 minutes to develop flavors
