- 2 cupsrolled oats
- 1 teaspooncinnamon
- 1 teaspoonbaking powder
- 0.5 teaspoonsalt
- 1 cupmashed banana(very ripe; from about 2 large)
- 3 largeeggs
- 0.5 cupskim milk
- 0.25 cupmaple syrup
- 1 teaspoonvanilla
- 0.25 cupunsalted butter ((melted and cooled slightly))
- 0.5 cupchopped walnuts, shredded coconut, or chocolate chips ((optional))
- 2scoops vanilla whey protein powder
Instructions
- 1Preheat the oven to 350 degrees F and grease an 8x8-inch baking pan.
- 2Optionally, you can briefly pulse the oats in a blender or food processor before starting the recipe to make them a slightly finer texture. This results in a baked oatmeal with oats that are less visible and slices that hold together a little more easily.
- 3Stir all ingredients together in a bowl.
- 4Pour into the prepared baking pan and smooth the top with a spatula.
- 5Bake for 28-30 minutes or until a cake tester inserted into the center comes out clean and the edges are lightly golden brown.
- 6Place pan onto a wire rack and let cool completely before cutting.
