Ingredients

- 400 gpork belly slices(sliced into 1cm thick strips)
- 50 mllight soy sauce
- 50 mlml sake
- 2 tbspmirin
- 1 tbsphoney
- 2garlic cloves(minced)
- 2portions cooked short-grain rice
- 2egg yolks
- 3 gchives(finely chopped)
Instructions
- 1Add the pork belly to a cold pan with no oil.
- 2Raise heat to low-medium and slowly cook so the fat renders out.
- 3Start cooking rice.
- 4Meanwhile, prepare your Butadon sauce by adding soy sauce, sake, mirin, honey and minced garlic to a bowl. Stir and set aside.
- 5Continue to cook until golden and slightly browned.
- 6Drain off all fat.
- 7Add in the sauce in with the meat and place on medium heat. Leave to simmer for a few minutes or until thickened into a glossy sauce.
- 8Divide your piping hot, cooked short-grain rice between two bowls, then top with your cooked pork belly.
- 9Top the Butadon with an egg yolk and finely sliced chives.
