Egg Salad
Egg Salad
- eggs(enough for one sandwich; boiled, peeled)
- Japanese mayonnaise (Kewpie)(a good amount)
- Dijon mustard(a small amount)
- salt and MSG mix(a little bit, to taste)
- sugar(a little bit)
Sandwich
Sandwich
- shokupan(soft Japanese white bread)
Instructions
Egg Salad
- 1Bring about an inch of water to a boil in a pot.
- 2Gently lower the eggs into the already hot water (they do not need to be covered). Boil for about 9½–10 minutes, adding a little more water if it boils away.
- 3Transfer the eggs to an ice bath, then peel them under cold running water, cracking them all over and starting at the fat end where the air bubble is.
- 4Set aside the nicest egg to slice for the sandwich.
- 5Take one whole egg plus several egg yolks (set the whites aside). Use a spatula to push them through a fine strainer until fluffy and smooth.
- 6Chop two egg white halves and add them to the strained egg for chunky bits.
- 7Add a good amount of mayo, a small amount of Dijon mustard, a little salt and MSG mix, and a little sugar. Fold together, taste, and re-season as needed.
Sandwich
- 1Spread the egg salad on shokupan, keeping the filling away from the edges.
- 2Add a layer of sliced boiled egg in the middle, then top with more egg salad and another slice of shokupan.
- 3Cut the edges off the sandwich, then cut it open to serve.

- "salt and MSG mix (a little bit, to taste)" assumed as "1 pinch of salt and msg mix"
- Japanese Mayonnaise is not in our ingredient list, so it is counted as a typical ingredient.
