🍳Fresh Fried Flounder

You can find these fellas anywhere in the world, but my specialty is the Nova Scotian Winter Flounder. This Dark flounder likes to hide among rocks in areas that have enough seaweed for it’s prey fish to hide in or feast on. So, I recommend grabbing a trident and snorkel, then heading out to an area that has a mix of rock, sand, seaweed, and lots of little fish. Once in a prime location, float along slowly, scanning the sea bed. These fish have great camouflage, so they can be hard to spot, but this also helps with catching. They are so confident in their disguise that you can get relatively close without them swimming away. Place your trident 6-12 inches above the fish and aim a couple inches in front. Then spear with conviction! With any luck, the fish will swim directly into the path of your spear, allowing for a clean catch. Now quickly place it in a bucket and the sooner you cook it the better, considering you just put several holes in it.

Instructions
- 1Grab a sharp knife and quickly cut the head off the fish. This should open up its body cavity which is relatively close to the head and small on this fish.
- 2Slice length ways along the cavity, without continuing past it, to open it up and remove the guts.
- 3Rinse the fish under water, and then score the body 2-3 times in perpendicular directions on each side. (this helps prevent curling from rigamortis and allows salt penetration onto the flesh. Alternatively, if you want an intact presentation, leave the fish in the fridge for an hour after gutting to wait out the rigamortis.)
- 4Rub salt into the cuts, and across the skin.
- 5Preheat a pan to medium-high, add a splash of oil, then cook each side for about 2 minutes, or until crispy and browned.
- 6Serve fresh with lemon wedges for optional flavouring.
