Spicy Dipping Broth

  • 250 gbeef broth
  • 1 tspsmoked paprika
  • 0.5 tspcoriander
  • 1 Tbspchipotle in adobo(Diced)
  • salt(sprinkle)
  • MSG(small pinch)
  • 0.5lime(juiced)
  • 1shallot(finely diced)
  • cilantro(diced)

Seasoned Beef

  • 450 gExtra lean ground beef
  • 2 Tbsptaco seasoning
  • 1 Tbspchipotle in adobo(diced)

Assembly

  • 180 glow fat cheddar cheese(shredded, 20g per taco)
  • 9corn tortillas
  • cooking oil spray

Instructions

Spicy Dipping Broth

  1. 1Pour beef broth into a pan.
  2. 2Cut the lime and chipotles, prepping 2x the amount of chipotle as you need more later for the meat.
  3. 3Add smoked paprika, coriander, chipotles, salt, MSG, and lime juice, then stir.
  4. 4Reduce to about half volume, then taste and adjust seasoning if needed, then set aside in a serving bowl.
  5. 5Right before serving, dice white onion and cilantro.

Seasoned Beef

  1. 1Smash ground beef into a ripping hot pan in an even layer. (Stainless steel would be ideal and will prevent damage done in the later potato masher / whisk step.)
  2. 2Leave alone for 3-4 minutes to develop a hard sear.
  3. 3Scrape and flip the beef chunks.
  4. 4Add the chipotles in adobo along with half the taco seasoning.
  5. 5Break up beef with spatula to distribute seasoning.
  6. 6Use potato masher or metal whisk to break beef into fine pebbly bits.
  7. 7Gradually add small amounts of the beef broth mixture previously prepared, and remaining taco seasoning, tasting as you go until you reached the desired doneness and flavor.

Assembly

  1. 1Spray hot griddle or pan with cooking oil and set to medium-low heat.
  2. 2Lay corn tortillas on and brown the first side.
  3. 3Flip once brown and then add 20g of cheese to each tortilla, letting it hang over edges.
  4. 4Quickly add 50g seasoned beef to each tortilla as well.
  5. 5Instantly fold tortillas in half and press on them until a little bit of cheese and meat spills out, allowing it to crisp for a few minutes on each side.
  6. 6Add diced onion and cilantro to the broth before serving.
