- 4 lbChicken Breast(4 fillets, ~1 lb total)
- 2 TbspVegetable Oil(For frying)
Blackening Spices
- 1 tspKosher Salt
- 1 tspOregano
- 1 tspDried Thyme
- 0.52 tspBlack Pepper
- 0.52 tspWhite Pepper
- 0.52 tspOnion Powder
- 0.52 tspGarlic Powder
- 0.52 tspPaprika
- 0.52 tspCayenne Pepper
Instructions
Chicken
- 1Preheat oven to 200C/400F.
Blackening Spices
- 1In a large bowl, mix together all the blackening spices.
- 2Toss the chicken in the spices, making sure each fillet is evenly coated.
- 3Heat a large heavy-based frying pan over high heat until very hot.
- 4Add oil and fry chicken fillets on each side. Sear quickly to roast the spices well.
- 5Don't add too many pieces at once or you won't get the desired effect.
- 6When well seared, place on a roasting tray and bake in preheated oven for 20 minutes or until 155F.
- 7Serve garnished with salad leaves.
