Taco Filling

  • 3chicken breasts
  • 1 tspsalt
  • 1 tsppepper
  • 1 cupgrated parmesan
  • 1 tspDijon mustard
  • 1 Tbspolive oil
  • 1lemons zest
  • 1 clovegarlic(minced)
  • 6 smallflour tortillas
  • 0.5 headromaine lettuce(chopped)
  • 0.5 cupcroutons(optional)

Caesar Dressing

  • 1 clovegarlic
  • 0.33egg
  • 1 tspDijon mustard
  • 2.5 tspmaple syrup
  • 0.33lemon(juiced)
  • 1 tspWorcestershire sauce
  • 0.33 cupshredded parmesan
  • 4 tspapple cider vinegar
  • 1 tspfresh cracked pepper
  • A pinch of salt(to taste)
  • 0.5 tspfish sauce
  • 7 Tbspvegetable oil

Instructions

Taco Filling

  1. 1Chop breasts into somewhat thin slices, place in a bowl, and mix in salt, then let sit while you prepare all other ingredients and make the sauce.
  2. 2In a separate bowl, mix pepper, parmesan, Dijon, olive oil, lemon zest, and garlic, then set aside.
  3. 3Once everything else is prepared, heat a large skillet over high heat.
  4. 4Cook the chicken until done and at-least one side is well browned.
  5. 5Chop chicken into tiny pieces, then mix it with the prepared bowl of flavourings.
  6. 6In a clean pan on medium heat, spread a small amount of oil, then place in a flour tortilla.
  7. 7Cook until lightly golden, then flip.
  8. 8Fill with chicken, sauce, optionally croutons, and lettuce, then fold into a taco and press down.
  9. 9Cook both sides until golden brown.
  10. 10Repeat in batches.
  11. 11(Note that lettuce can alternatively be added after cooking to maintain freshness, but this gets a bit messy and can ruin the taco integrity.)

Caesar Dressing

  1. 1To make Caesar dressing, add all ingredients except oil to a blender. Blitz to combine, then stream in oil slowly while blending until emulsified.
  2. 2(The ingredient amounts are awkward, but dialled in to reduce waste, but feel free to just 3x and all tsp measurements become Tbsp measurements. Note that 1/3 egg is 1 to 1.5 Tbsp of whisked egg.)
