Instructions

Maranade

  1. 1Combine all ingredients large bowl.
  2. 2whisk together until thoroughly combined.
  3. 3Add chicken thighs, cover, and marinate in the fridge overnight.

Pickled Jalapenos

  1. 1In a medium sauce pot, add vinegar, water, salt, and sugar.
  2. 2Bring to a boil, then turn off heat once solids are disolved.
  3. 3Add the jalapenos to a small mason jar.
  4. 4Pour the pickling liquid in then let cool to room temperature.
  5. 5Add the dill and garlic.
  6. 6Cover and refrigerate ideally for atleast a day, and up to a few months.

Chicken Sauce

  1. 1Add all of the ingredients except the garlic to a medium sauce pot.
  2. 2Bring to a boil over medium-high heat.
  3. 3Stir for 1 minute.
  4. 4Cut the heat, wait for boilg to subside, then stir in the garlic.
  5. 5If you acidentally added the garlic at the start, throw it out and re-start.

Garlic Mayo

  1. 1Combine all of the ingredients and whisk together until fully combined.
  2. 2Season to taste with salt and freshly cracked black pepper.

Kimchi Slaw

  1. 1Combine the cabbage, kimchi, green onion, and garlic.
  2. 2Add mayo In a seperate small bowl.
  3. 3Scoop in mayo when ready to eat, the toss until combined.

Dredge

  1. 1In a large bowl, combine everything except the baking soda.
  2. 2Whisk together until thoroughly combined.
  3. 3Remove chicken from maranade & place on a plate or trey.
  4. 4Take number of cups shown to the left from dredge & place in maranade.
  5. 5Mix baking soda into the maranade.
  6. 6Flick maranade into the dredge about 4 times, mixing the dredge each time.
  7. 7soak chicken in maranade then place in dredge one at a time, coating well, getting crevices, and pressing down hard on it.
  8. 8Heat oil to 325F, then cook 2 pieces of chicken at a time, 4 minutes each, increase heat to 350F, then cook 2 minutes each. (Be gentle or risk separating the crispy exterior)
  9. 9Let drain on wire rack, then coat in chicken sauce.

Frying & Assembly

  2. 2Optional bun toasting: In a large pan, heat a couple tablespoons of butter over medium heat until melted and bubbling.
  3. 3Add your buns cut side down and toast for about 2 minutes or until golden brown
  4. 4To assemble your sandwich: Start with a generous tablespoon or two of garlic mayo on the bottom and top bun.
  5. 5On the bottom bun add your slaw, then your sauced chicken, some pickled jalapeños on top of your chicken and then your mayo'd top bun.
